Mmh ... we realize that we still have to have breakfast, we are really hungry! What's better than a berry cheesecake? Today we will prepare a mouthwatering variant of this cake, cheesecake in glasses, even easier to prepare. Few ingredients, a few large capacious glasses and in a moment we can breathe the New York air, an air that tastes of freedom, of sea and buildings, of cars and a touch of madness.
Butter-free biscuits, 400 ml of coconut milk from the fridge, 300 ml of cold soy yogurt, 8 dates, mixed berries, 3 tablespoons of brown cane sugar and 1 teaspoon of lemon juice. Blend the cookies together with a tablespoon of yogurt and dates. Blend until you get a dough that sticks. Cover the bottom of the glasses with this mixture. In another bowl, mix the solid part of the coconut milk and the remaining soy yogurt. Add 2 tablespoons of sugar. Distribute the cream in the glasses. Finally, blend the berries together with the lemon juice and the remaining sugar. Pour the jam into the glasses to complete the cheesecake, serve and ... get ready to dive into the States!
