Apple pie is a classic, everybody loves it because it reminds of the childhood, of the warmth of the home and of the people you love the most. Here we propose the apple pie in a very healthy version, prepared with a lot of apples, also in the dough, and dry fruits. And the extra note? A thin layer of apricot jam that gives to the cake more sweetness and creaminess.
Ingredients
200 g of semiwhole grain spelt flour
1 Kg of apples
2 tablespoons of apricot jam, sugar free or with a little brown sugar (optional)
90 g of brown sugar
2 eggs
3 tablespoons of plant based yogurt
5 walnuts
10 almonds
1 little packet of yeast powder for sweets
1/2 teaspoon of vanilla powder
1/2 teaspoon of cinnamon powder
1/2 organic lemon, juice and peel
Peel and cut into small pieces the apples, except one, place these pieces in a bowl covered with the juice of half a lemon and two tablespoons of sugar taken from the total amount. In another bowl whisk the eggs with the sugar until they are soft, add the yogurt, the grated peel of half a lemon, the flour mixed with yeast, cinnamon and vanilla and the dry fruits coarsely ground. Mix, add the apple pieces. Pour the dough in a cake mold slightly greased with oil. Peel and cut into slices the apple you’ve taken apart. Decorate the surface of the cake with these slices and bake the sweet in the oven at 180° for 54 minutes. Remove the cake from the oven. In a water bath, heat the jam in order to make it more liquid and spread it on the cake. What a delicious cake!
