Sometimes we like a cake, what can we prepare in order to satisfy the mood for something sweet and at the same time make a healthy choice? For sure the apple pie is a yummy and healthful recipe, prepared with genuine ingredients that bring fibers, energy, ideal for young or sporty people as well as for those who have to face stressing days, but also antioxidants thanks to the spices, to the raisins and to dry fruits. Moreover, the choice of the flours and the use of cinnamon guarantee slow release carbohydrates and the levels of blood sugar under control. The snack is on the table!
Ingredients for the dough
190 g of semi whole grain spelt flour
100 g of khorasan flour
90 g of semi whole wheat flour
1 teaspoon of whole cane sugar
1 egg
35 g of sunflower oil
150 g of water at 35°C
Ingredients for the filling
1 kg of apples
A pinch of grated lemon peel
50 g of whole cane sugar
Vanilla powder
1 teaspoon and half of cinnamon powder
1 teaspoon of clove powder
60 g of raisins
20 g of pine nuts
20 g of shaved almonds
Rum (optional)
Soak raisins in a bowl full of water and a tablespoon of rum for about two hours. In the meantime, prepare the dough, mix the flours, the egg, the sugar, the oil and the water, knead all the ingredients. If the dough is too soft add other khorasan flour. Let the dough rest for about thirty minutes. Peel and cut into pieces the apples, put the apples into a large bowl and add the squeezed raisins, the pine nuts, the almonds, the sugar, the cinnamon, the cloves, the lemon peel and the vanilla. Roll now the dough with a rolling pin on a baking paper, the thickness of the dough should be around a few millimeters. In the middle add the filling, leave a few centimeters from the edges. With the help of the baking paper fold inwards the shortest sides, then fold inwards also the long sides by overlapping them a bit, finally close well with the fingers the edges. Pay attention during this phase because the dough is very delicate. Put the pie on a baking pan and bake in the oven at 180°for 35 minutes.
