Arabic Pita bread

Here is the recipe to prepare at home a truly delicious, tasty and healthy Arabic pita bread with just unrefined flours. This is really a great way to involve the whole family in a carefree and useful activity, and then the scent of Arabic bread will fill the house infusing so much joy! 400 grams of semi-whole wheat flour
100 grams of whole wheat flour
260 grams of water
13 grams of brewer's yeast (you can replace it with 4 grams of dry brewer's yeast)
two tablespoons of extra virgin olive oil
6 grams of sea salt
Dissolve the yeast in warm water, if you use instead dry yeast follow the instructions on the package. In a bowl mix the flours, add the extra virgin olive oil and the yeast. Knead the dough and gradually add the salt. If the dough is too hard, add some water. Throw the dough a couple of times against the work surface and keep on kneading for about ten minutes. Then, put the dough in a bowl greased with oil, cover with a cloth and let it rise for about 45 minutes. After this time, take again the dough and form eight round pieces. Place the rolls, well spaced, on a baking pan covered with baking paper and lightly flour each roll. Quickly wet a sheet of baking paper, wring it out and place it on the rolls, let them rise again for 30 minutes. Then remove the wet baking paper and, with a floured hand, slightly flatten the rolls. Let the bread rise again for another 30 minutes. Bake the bread at 200° C for 7 minutes, then lower the temperature to 180° C and continue to cook for 12 minutes. Remove the bread from the oven and let cool down.
