This delicious and fragrant pizza has the colors and flavors of autumn. Pumpkin, broccoli, onions and anchovies are the topping of a tasty pizza, prepared with unrefined flours to avoid dangerous glycemic peaks. And then the autumn pizza is also healthy, in fact, the baked pumpkin is a precious source of mineral salts, such as zinc, magnesium and potassium, and of beta carotene, which is a powerful antioxidant, while broccoli are anti-aging and anticancer.
Ingredients for the dough
150 grams of semi-whole wheat flour
75 grams of whole wheat flour
125 grams of lukewarm water
6 grams of fresh brewer's yeast
2 grams of sea salt, finely ground
Ingredients for the dressing
1 small pumpkin
1 red onion
6-7 anchovies in oil
1 clove of garlic
Extra virgin olive oil
Preparation of the dough
Dissolve the yeast in the water. In a bowl, mix the flours, add the water with the yeast and two tablespoons of oil. Knead, if necessary add more water to obtain a soft dough. Work the dough with your hands and add the salt. Beat the dough against the work table a couple of times. Place the dough in a bowl covered with a cloth and let it rise away from drafts for 3-4 hours. Roll out the dough with your fingers on a baking sheet covered with baking paper and greased with oil. Cut the pumpkin into slices and remove the skin. Cook the pumpkin in the oven until the pulp is soft, it will take about 20 minutes. In a bowl, mash the pumpkin pulp with a fork, add a pinch of salt and mix. Spread the pumpkin pulp on the pizza dough. Cut the onion into slices and spread over the pumpkin. Bake at 200° C for 20 minutes in a convection oven.
Preparing the dressing
Cut the broccoli into florets and chop the garlic. In a pan, brown the garlic in extra virgin olive oil over low heat. Add the anchovies and remove from heat, let them melt. Separately, boil the broccoli for five minutes in boiling salted water, drain the broccoli and sauté it in a pan with the oil, garlic and anchovies for a minute.
Preparing the pizza
Once cooked, remove the pizza from the oven, distribute the broccoli and serve.
