Baby octopus with peas in tomato sauce is a dish that is healthy, nutrient and yummy and everybody will really love it! This recipe brings mineral salts, proteins, fiber and antioxidants, is satiating and so good and tasty that it will be finished in a blink, for sure! This recipe is perfect to be prepared and served for lunch.
Ingredients for 4 persons
600 g of baby octopus
300 g of canned peas
600 g of cherry tomatoes
5 tablespoons of crushed tomatoes
1/2 glass of white wine
1 clove of garlic
2 shallots
Salt
Extra virgin olive oil
Chili pepper
Rinse the cherry tomatoes and cut them into quarters. Clean the baby octopus, separate the heads from the tentacles. Divide the heads in half along the length, cut in half just the biggest tentacles. Cut into thin slices the shallots and sautè in a frying pan with the garlic, a little extra virgin olive oil and two tablespoons of water. Then add the baby octopus and cook for five minutes, pour the wine and let it evaporate. Add the cherry tomatoes and the crushed tomatoes, keep on cooking for thirty minutes and stir often. When there are ten minutes left add the peas, well rinsed and drained. At the end of cooking add salt and the chili pepper. Remove the garlic and serve!
