Waking up with a yummy banana bread waiting for you is very easy! This bread, sweet, spicy and scented is really good but also healthy, rich in fibers and energizing. We propose to use whole grain flours that are a slow release carbohydrates food, important to give you energy and strength during all the morning. Another ingredient of this banana bread is the cinnamon that helps keep under control the blood sugar levels. And then there is the smell…it is so inviting that it seems to say you good morning!


2 ripe big bananas

120 g of whole grain spelt flour

100 g of whole wheat flour

50 g of whole cane sugar

120 g of almond milk

1 tablespoon of extra virgin olive oil

1/2 package of backing powder

2 teaspoons of cinnamon

1/2 teaspoon of vanilla powder

50 g of dried fruits (slivered almonds, Brazil nuts, walnuts and cashew nuts coarsely ground)

In a large bowl crush the pulp of the bananas with a fork until you’ll obtain a cream. Add the sugar mixed to the vanilla powder and the cinnamon and mix well the ingredients. Pour now the milk and the extra virgin olive oil and stir with a spoon, then pour the flour with the baking powder, keep on stirring. Add the dry fruits and other milk if it is needed. Pour the dough in a plumcake tin and bake in the oven at 180°C for 44 minutes. Here you go a yummy recipe for super breakfasts!
