Bowl of rice, purple potatoes, mussels and vegetables

The recipe that we propose today is a tasty and healthy dish, together with the properties of the vegetables, zucchini, tomatoes and artichokes, there are also the important antioxidants of the purple potatoes. The mussels are a source of proteins and mineral salts.

Ingredients

250 gr of frozen mussels or 500 gr of fresh mussels
300 gr of purple potatoes
150 gr of semi brown rice
2 tomatoes
1 zucchini
1 artichoke
½ red onion
30 gr of shaved parmesan
Bread crumbs
200 ml of water
1 clove of garlic
parsley
Salt
Pepper
Extra virgin olive oil
If the mussels are fresh, rinse them and put them in a pot, cook the mussels with a little oil and white wine. When the mussels are open take the molluscs. On the contrary, if the mussels are frozen let them thaw. Rinse and peel the potatoes, cut them into thin slices. Cut into slices also the tomatoes, the onion, the zucchini, remove the most external leaves of the artichoke and cut it into slices, too. Chop the garlic and the parsley. In a big bowl pour a little oil and place a first layer of onion and chopped garlic. Put now another layer of potatoes. Add then some slices of tomatoes, zucchini and artichoke, add salt, pepper and parsley. Place a layer of mussels and add raw rice in order to cover all the surface. Add water by pouring it from just one side of the bowl. Finish with a layer of potatoes, the remaining vegetables and finally parsley, bread crumbs, a little parmesan and oil. Bake in the oven at 200° for one hour.
