Breakfast brioches

Scent, sweetness and softness, here for you the brioches for the morning, easy to prepare and genuine. With a yummy and healthy breakfast like this the wake up time is really amazing!


200 grams of wheat flour
300 grams of semi whole wheat flour
15 grams of whole cane sugar
3 tablespoons of chestnut honey
260 grams of plant based milks
20 grams of plant based yogurt
20 grams of fresh baker’s yeast
4 grams of sea salt
Mix the two flours and the sugar. Heat quickly the milk, it should be lukewarm, and pour it in a glass where you will add also the yeast. Stir with a spoon in order to dissolve the yeast. Pour the milk with the yeast on the flours and add also the yogurt and the honey. Knead the dough until it will be soft and homogeneous, if necessary add flour or milk. Incorporate the salt. Put the dough in a bowl covered with a plastic wrap and let it rest for about 1 hour and a half in a warm place. Divide now the dough into breads of the size of an egg, you should obtain around 18 breads. Place the breads on a baking pan covered with baking paper and let them rise in the oven with the light on until they will double their volume, this will take about 2 hours. Bake in the convection oven at 190° for 8 minutes. Remove then the breads from the oven and let them cool down. If you want to eat them in the following days you just have to put them in a bag in the freezer. The evening before, take the breads from the freezer and put in the fridge. The next morning heat them at 160° for 4 minutes and the brioches are ready!
