The breakfast cake represents a sweet, energy boosting and healthful way to start your day. The cake isn’t prepared with butter but extra virgin olive oil only, then whole cane sugar and raisins are the other ingredients for this cake able to wake up everybody. The cake can be kept for some days.

Ingredients

350 gr of semi –whole grain flour

60 gr of whole cane sugar

60 gr of extra virgin olive oil

4 eggs

130 ml of milk, you can use also soy milk

40 gr of yogurt, also in this case you can use soy yogurt

1 packet of yeast for cakes

a pinch of vanilla powder

80 gr of raisins

Marsala

Separate egg whites and yolks and soak raisins in a mixture of water and marsala. In a bowl mix oil and sugar and add the egg yolks, one at a time. Keep on mixing. Add flour with the yeast, the milk, yogurt and finally squeeze and add the raisins. Mix for some minutes all the ingredients. Beat the egg whites until stiff and pour them in the bowl with the other ingredients, mix slowly. Pour the cake compound in the cake pan and bake in the oven at 180° for 35 minutes.
