Briam is a starter or a side dish of the Greek cuisine. It is prepared with vegetables and herbs and results very tasty, rich in fiber, antioxidants and mineral salts. The recipe has been given us by a Greek friend, who owns a taverna, the typical Greek restaurant. Thank you Anna! With your delicious food you’ve made us love Greece even more! In this version we’ve added a pinch of fresh chili pepper in order to make the dish a little spicy.
Ingredients for 4 people
1 kg of zucchini
1 kg of potatoes
1 kg of eggplants
3 onions
2 green peppers
1 kg of tomatoes
salt
pepper
extra virgin olive oil
parsley
fresh mint
fresh chili pepper
Rinse the zucchini, the eggplants, the peppers and the tomatoes and cut these vegetables into thick slices. Cut into thick slices also the onions, peel the potatoes and cut them into pieces. Put all the vegetables in a pan covered with backing paper, add a handful of parsley, some mint leaves, salt and pepper. At this point add extra virgin olive oil and stir with a spoon. Pour two glasses of water in the pan and cook in the oven at 135° for two hours. If it is needed add some more water during the cooking. Finally add the chili pepper cut into thin slices and, if you like, a handful of fresh parsley. Serve as a starter or side dish with meat or fish, it will be like having the scented hills of Greece on your table!
