Broccoli balls

Here is a joyful, scented and yummy way to serve broccoli! Broccoli balls have a soft heart and a crispy breading given by sesame and Brazil nuts, source of selenium, a powerful antioxidant. We propose these balls with common cornsalad and fennel, rich in vitamins, fiber and mineral salts.


500 grams of broccoli
300 grams of whole grain stale bread
2 organic eggs
300 ml soy milk
100 grams of Brazil nuts
50 grams of sesame
Common cornsalad
1 fennel
Extra virgin olive oil
Red wine vinegar
Sea salt
Rinse the broccoli and cut them into pieces. Steam the broccoli for about 10 minutes, they should become soft. Crush the broccoli with a fork and let cool down. In a bowl soak the bread in the milk, then remove from the bowl and squeeze. Mix the soaked bread, the broccoli, the eggs, a pinch of salt and ground pepper. Knead the dough and form the balls. Chop up the Brazil nuts and mix them with the sesame. Pass the balls in this breading. Put the balls in a baking pan covered with baking paper and cook at 180° for 15 minutes. Serve with common cornsalad and fennel cut into slices, season with extra virgin olive oil and vinegar.
