Ingredients for gnocchi
120 grams of buckwheat flour
120 grams of whole wheat flour or semi whole wheat flour
1 dl of water
2 eggs
nutmeg
Extra virgin olive oil
Ingredients for the sauce
2 zucchini
1 long purple eggplant
200 grams of cherry tomatoes
6 dried tomatoes
150 grams of feta cheese
1 small red onion
Tamari sauce
Preparation of the gnocchi
In a bowl mix the flours and make a batter by adding 100 ml of water, a drizzle of extra virgin olive oil and a pinch of nutmeg. Add the eggs and stir. Pass the batter in a colander with large holes on the pan of boiling salted water. As soon as the gnocchi come to the surface, drain them and set them aside.
Preparation of the sauce
Separately, cut the zucchini and eggplant into small cubes, cut the tomatoes in half and cut the dry tomatoes into pieces. Slice the onion. Lightly brown the onion in a frying pan with a tablespoon of olive oil and two tablespoons of water. Add zucchini and eggplant and sauté briefly. Add the tomatoes, dried tomatoes, feta cut into pieces and a tablespoon of tamari sauce. Stir and cook for 15 minutes. Season the buckwheat gnocchi with this sauce and enjoy your meal!
