Today we see a recipe for a truly exceptional breakfast. Developed by Dr. Johanna Budwig as a combination of substances with antitumor and anti-inflammatory action, this breakfast is an exquisite cream and a source of energy, proteins, vitamins and minerals (Meiners et al, Cancers, 2011). And as we know from research, when protein is consumed in the morning it is even more potent at nourishing the muscles and making them active! But the strength of the Budwig breakfast is the fact that it combines omega 3 type fatty acids with the sulfur amino acids contained in grains such as millet, amaranth or buckwheat or even in products such as cottage cheese (Mannion et al, Nutrients. 2011). This combination allows the substances to be absorbed more easily and to preserve all their properties. In fact, according to Dr. Budwig, the synergy between omega 3 and sulfur amino acids allows to release the energy needed by the cell to make cellular respiration work properly and to counteract an oxygen-poor environment, which is a favorable ground for the development of degenerations (Mannion et al, Nutrients. 2011). So let's see the very simple preparation of Budwig cream, in two versions, a classic one that includes ricotta or yogurt, and a vegan one, also designed for those who are lactose intolerant.
Ingredients for the vegan version
150 ml of almond or oat milk
3 tablespoons of wholegrain millet flakes (but amaranth or buckwheat are fine too)
1 banana (or a grated apple depending on your taste)
1 tablespoon of linseed oil
1 tablespoon of berries such as currants, blackberries and raspberries
1 tablespoon of ground flaxseed (you can use a coffee grinder)
Ingredients for the classic version
150 grams of cottage cheese or yogurt
2 tablespoons of milk
1 tablespoon of linseed oil
1 teaspoon of honey
1 tablespoon of ground flaxseed
Seasonal fruit
Preparation of the vegan cream
Mash the banana until puree, add the vegetable milk and flakes. Mix and pour the linseed oil. Top with the fruit and ground flax seeds, mix and serve.
Preparation of the classic cream
Mix the ricotta and milk until a homogeneous cream is obtained. Add the linseed oil and mix. Sweeten with honey, complete with seasonal fruit and ground flax seeds.
