Here you go a healthful dish for summer! The colorful peppers make the recipe very enjoyable, bulgur is instead an ancient grain made from whole wheat. In the proposed recipe the bulgur is cooked together with cherry tomatoes, rich in lycopene, a powerful antioxidant, onion, lesser calamint and basil.
Ingredients for 4 persons
8 peppers, yellow and red
300 g of bulgur
1 handful of cherry tomatoes
1/2 onion
Basil leaves
Lesser calamint
Extra virgin olive oil
Salt
pepper
Cook the bulgur in half a liter of salty water for twenty minutes, then drain it. Cut the onion into slices and cut into pieces the cherry tomatoes. In a frying pan sauté the onion with a little oil, add then the tomatoes and cook for 5 minutes. Pour the bulgur together with the chopped basil and the lesser calamint and cook for a few minutes, remove from heat and add a little salt and pepper. Cut the top of the peppers and remove the seeds. Fill the peppers with the bulgur, tomatoes and herbs and put the top of the peppers like a decoration. Put the peppers in a pan with oil and some spoons of water, bake at 180° for 45 minutes covered with an aluminum foil.
