Bulgur with shrimp

Bulgur is an ancient cereal obtained from the whole wheat grain. It is very tasty and is also rich in fibers with a beneficial effect against cardiovascular diseases. In this delicious recipe bulgur is served together with tomatoes, rich in lycopene that’s a powerful antioxidant, shrimp, olives and aromatic herbs.


250 g of bulgur
1 kg shrimp
1/2 onion
2 tablespoons of black olives
4 tomatoes
pepper mint
lesser calamint
Extra virgin olive oil
Chili pepper
Peel and devein the shrimp. Prepare a broth by boiling for ten minutes the shells and the heads of the shrimp in three quarters of a liter of water. Filter then the broth and use it to cook the bulgur, it will take about fifteen minutes. In a frying pan sauté the chopped onion with a little oil and two tablespoons of water on low heat, add in the same pan also the shrimp and the minced parsley, cook all the ingredients for five minutes. Add now the tomatoes, cut into slices, a pinch of chili pepper, a little salt and keep on cooking for ten minutes on medium heat, stir often with a spoon. In a plate pour the bulgur and then also the sauce with shrimp. Decorate with black olives, minced pepper mint, lesser calamint, basil and parsley.
