Chili with red beans and basmati rice

Proteins, antioxidants and fiber for this dish rich in taste and joy. Together with the wholegrain basmati rice this dish is complete because it gives also carbohydrates without causing too high levels of blood sugar, that are dangerous for health. In addition to this, basmati rice is very digestible and is characterized by a particular fragrance, enjoy your meal!

Ingredients for 4 persons

200 g of wholegrain basmati rice

350 g of red beans or borlotti beans

500 g of tomatoes

1 chili pepper

2 onions

1 tablespoon of sweet paprika

2 tablespoons of wine vinegar

1 teaspoon of brown cane sugar


extra virgin olive oil


If you have dried beans, soak them in cold water for at least 8 hours, then rinse them and cook in a pot completely covered with salty cold water for about 45 minutes, alternatively, if you prefer canned beans skip these steps but rinse well the beans in order to remove the dressing and salt. Now, in a pot full of water cook the rice in accordance with the timing reported on the pack. Start preparing the sauce, in a frying pan sautè the chopped onion in a little oil. Add the drained beans and the vinegar, stir with a spoon and keep on cooking on a low heat for a couple of minutes. At the same time rinse the tomatoes, cut them into slices and add them to the beans in the pan. Cook for ten minutes, pour water if needed. Alternatively, if you prefer, you can use, instead of fresh tomatoes, canned tomatoes, 400 g. At the end of cooking, remove from heat and add paprika, sugar, tabasco and, finally, the chili pepper cut into pieces, stir and serve with basmati rice.
