When for breakfast there are the delicious brownies, waking up is really easy! These sweets are perfect for an amazing breakfast or snack with a cup of green tea! The chocolate gives energy and good mood and the pears … they melt in the mouth and are so yummy and sweet together with the crunchiness of nuts. To prepare the brownies we used only whole grain flour, whole cane sugar, in a very limited quantity, and extra virgin olive oil, we don’t use eggs nor butter in order to give antioxidants and energy without increasing the glycemic index and the belly fat.
Ingredients
170 g of whole grain spelt flour
100 g of dark chocolate, at least 70% cocoa content
50 g cocoa powder
60 g whole cane sugar
2 teaspoons of yeast in powder
30 g of dry fruit (walnuts, almonds, cashew nuts and hazelnuts)
40 g of extra virgin olive oil
250 ml of rice milk or other plant based milk (very good also cashew, hazelnut or almond milk)
Vanilla powder
cinnamon
600 g of hard pears
Walnuts to decorate
In a large bowl mix the flour with the yeast, add half a teaspoon of vanilla, the sugar, the cocoa powder and the chocolate chopped coarsely. Blend shortly in a blender the dry fruit, it should not result too fine, and add it to the other ingredients. Pour the milk and stir, add also the olive oil. Mix the ingredients until you obtain a well mixed dough. Peel the pears and cut them into slices. Cook the pears in a pot with a tablespoon of water, a teaspoon of whole cane sugar and a teaspoon of cinnamon, stir with a spoon and cook on a low heat for some minutes. Cover a small rectangular baking pan with baking paper. Make a first layer with the chocolate dough, then a second layer with the pears and complete with a final layer of chocolate dough. Decorate with some pear slices and walnuts. Bake at 180° for 30 minutes, put out from the oven and cut the brownies into squares. Enjoy this yummy recipe!
