Christmas is in the air! For this reason, the recipe of the week is dedicated to these delicious Christmas cookies with chocolate, almonds and hazelnuts! And since Christmas is also taking care of the people we love the most, the cookies are prepared without butter, the used sugar is brown and the flour is whole grain. A sin of gluttony but with an eye for health! Prepare with us these yummy cookies and eat them with family and friends, maybe with a cup full of green tea!
200 grams of whole grain spelt flour
100 grams of brown sugar
100 grams of hazelnuts
100 grams of almonds
1/2 teaspoon of vanilla powder
200 grams of soy yogurt
50 ml of rice oil
100 grams of dark chocolate, at least 70%
100 grams of white chocolate, vegan
Grind the hazelnuts and the almonds until you get a flour. In a bowl mix the almonds, the hazelnuts, the sugar and the vanilla. Add the oil and the yogurt and knead the dough until it becomes soft and homogeneous. Keep it in the fridge for 30 minutes. After this time take again the dough and make little sticks with a length of 3-4 cm and a diameter of a bit more than 1 cm. Place the cookies on a baking pan covered with baking paper and bake in the oven at 180° for 10-12 minutes. Then, remove from the oven and let the cookies cool down. In two different pots, placed in a double boiler, melt the chocolates. Soak the ends of half of the cookies in the dark chocolate and the ends of the remaining cookies in the white chocolate. Put the cookies on a grid and let the chocolate solidify. Enjoy your snack!
