Christmas fruit cake, a yummy and powerful source of energy

The Christmas period is coming and together with this magic month also wet, rainy and cold days, so, there is really the need to have for breakfast or as a snack delicious and high-energy foods. Perfect for this purpose is the Christmas fruit cake, that in Italy is called zelten, a sweet bread prepared with flour, sugar, dry fruit, figs and raisins. In this variant the cake hasn’t any butter but just extra virgin olive oil, moreover, we use unrefined flour and sugar. Well, it is really a healthy cake that boosts your energy to face every day with joy and power!


150 grams of wholegrain spelt flour
60 grams of whole cane sugar
2 eggs
1 bag of yeast powder
4 tablespoons of extra virgin olive oil
125 grams of dry figs
40 grams of shelled walnuts
40 grams of cashew nuts
25 grams of pine nuts
50 grams of raisins
1 teaspoon of cinnamon
1/2 teaspoon of vanilla powder
20 ml of rum
1 pinch of clove powder
1 pinch of salt
Almonds and mixed candied fruits to decorate
In a bowl put the figs cut into pieces and the raisins, cover with 30 ml of water and 20 ml of rum, let it rest for 15 minutes. In another bowl whisk the eggs with the sugar until they become soft. Pour the oil, the flour mixed with the yeast, the cinnamon, the vanilla and the clove powder. Mix the ingredients, add a pinch of salt. Incorporate the dry fruits cut into coarse pieces, the figs and the raisins together with the soaking liquid. Pour the dough in a greased baking pan with a diameter of 20 cm. Decorate the surface of the cake with almonds, candied fruits or other dry fruits according to your taste. Bake in the fan oven at 190° for 20 minutes, then, remove from the oven and let it cool down. Now it’s time to serve this beauty!
