I came across this recipe by accident, by flipping through the old notebooks of grandma Lina. I tried to prepare the cake and the result was delicious! Without butter but just extra virgin olive oil, cocoa peach cake is a snack and a dessert healthy and exquisite, very easy to make and all the family will love it!
Ingredients
300 g of semiwhole grain spelt flour
4 peaches
2 eggs
100 g of whole cane sugar
1 lemon
1 glass of soy milk or other plant based milk
4 tablespoons of cocoa powder
70 g of extra virgin olive oil
1 packet of yeast for sweet dough
Peel the peaches and cut them into slices, put them in a bowl and dress with the juice of a lemon and a tablespoon of sugar taken from the total, let rest. In the meantime, pour in another bowl the flour with the yeast, the cocoa, the eggs, the oil, lemon zest, the glass of milk and the rest of sugar. Mix all the ingredients and put the dough in an oiled baking tin with a diameter of 25 cm. Decorate the surface with the peaches and bake in the oven at 180° for 30 minutes.
