A delicious recipe for you, prepared without eggs and cow milk, will be loved by all, adults and children. The cocoa pudding is a classic dessert that can be eaten in all seasons but in summer is something special because it is fresh, tasty, genuine and energizing. Here it is proposed with rice milk and berries.
Ingredients for 4 puddings
500 g of rice milk (you can also prepare it at home, in this case you need 80 g of brown rice and a liter of water)
40 g of cocoa powder
60 g of whole cane sugar
A pinch of vanilla powder
4 g of agar agar powder

In order to prepare the budding, you can buy the rice milk in a specialized shop or, alternatively, you can prepare it at home, it is not difficult. The preparation is reported at the end of this recipe. Dissolve the agar agar in a little milk, stir with a spoon. In another bowl mix the cocoa powder, the sugar and the vanilla, pour some spoons of milk in order to dissolve the ingredients and stir well. In a pot pour all the rest of milk, the cocoa cream and the agar agar and heat. Bring to boil, then low the heat and let simmer for five minutes. Pour the pudding in the molds, let them cool down and put in the fridge for a couple of hour. Put the puddings on a plate and decorate with fresh berries.
Recipe for the rice milk
You have a liter of water. Rinse the rice and soak it in a bowl with a part of the water for at least ten hours. Then pour the rice and the water in a pot, add the rest of water. Bring to boil and cook for twenty minutes. Remove from heat and blend with an immersion blender. Strain and squeeze the pulp very good. The rice milk is ready.
