When taste and health meet, the result is something exceptional. And if this something has the aromas of coffee and chocolate in it, then a truly irresistible breakfast is served! As in the case of our coffee banana bread, soft, fragrant, made even more delicious by the melted chocolate that covers it. And then banana bread is a source of carbohydrates, and therefore of energy, mineral salts, such as potassium, and proteins, thanks to yogurt, eggs and dried fruit. When protein is consumed in the morning it is even more effective at nourishing and supporting muscles than when it is consumed during the rest of the day! Finally, dark chocolate is a source of antioxidants while coffee improves attention and concentration.
Ingredients
3 ripe bananas
200 grams of wholegrain spelt flour
50 grams of semi wholegrain spelt flour
80 grams of whole cane sugar
200 grams of Greek yogurt or plant-based alternative
2 eggs
1 cup of espresso
1 teaspoon of baking powder for cakes
40 grams of dried fruit (cashews, hazelnuts and almonds)
3 tablespoons of chocolate chips
On a plate, mash the banana pulp and set aside. In a large bowl, whip the eggs with the sugar. Combine the coffee and yogurt and mix, Add the flour mixed with the yeast and finally the crushed banana pulp. Crush the dried fruit and add to the mixture along with the chocolate chips. Spread the mixture into a loaf pan and bake in the oven at 180 degrees for 45 minutes. The extra idea? Melt 100 grams of dark chocolate in a double boiler and pour over the banana bread, serve in this way, savoring the notes of coffee and chocolate that together give you the energy to face even the most tiring days!
