Ingredients
320 g whole grain spelt short pasta
4 tablespoons of unshelled walnuts
1 clove of garlic
3 tablespoons of shaved parmesan cheese
1 brown bread soaked in soy milk
Extra virgin olive oil
Sea salt

Prepare the walnut pesto, add in the blender the walnuts, the bread, soaked in the milk and squeezed, a pinch of pepper, the clove of garlic and the parmesan. Blend all the ingredients until smooth. Pour this cream in a bowl and add slowly about three tablespoons of extra virgin olive oil, stir with a spoon. Cook the pasta and drain it al dente. Put the pasta very quickly under cold running water, then distribute it in the plates and season with the walnut pesto.
