Cold pasta with walnut pesto

Here for you a healthy, joyful and yummy recipe. Perfect to eat at home or also for an outdoor picnic, for a lunch at school or in the office. Cold pasta has a huge advantage, in this case indeed the starch becomes less available and the glycemic index decreases, according to a study performed by Surrey University. This is a good choice for those people who have to keep under control the blood sugar levels and, more in general, for all because the blood sugar peaks are linked to chronic inflammation, an enemy that should be counteracted in order to stay healthy. And to complete this dish we propose the walnut pesto, rich in essential fatty acids and anti inflammatory and antioxidants substances, enjoy your meal!

Ingredients

320 g whole grain spelt short pasta
4 tablespoons of unshelled walnuts
1 clove of garlic
3 tablespoons of shaved parmesan cheese
1 brown bread soaked in soy milk
Extra virgin olive oil
Sea salt
pepper
Prepare the walnut pesto, add in the blender the walnuts, the bread, soaked in the milk and squeezed, a pinch of pepper, the clove of garlic and the parmesan. Blend all the ingredients until smooth. Pour this cream in a bowl and add slowly about three tablespoons of extra virgin olive oil, stir with a spoon. Cook the pasta and drain it al dente. Put the pasta very quickly under cold running water, then distribute it in the plates and season with the walnut pesto.
