Ingredients for 4 people
320 grams of durum wheat flour pasta in paccheri format
1 kg of scampi
50 ml of vegetable cream
300 grams of cherry tomatoes
2 cloves of garlic
1 shot of brandy
Extra virgin olive oil
Parsley
Sea salt
Chilli (if you like the taste)
Clean the scampi and remove their shell, which should not be thrown away. Crush the garlic and brown it in a pan with extra virgin olive oil, chopped parsley and the shell. Pour the brandy and let it evaporate. Pour as much water as needed to cover all the ingredients and add salt. Let it cook for at least half an hour. Then filter the fish broth with a sieve and keep aside. Now prepare the scampi cream. In a pan, brown a clove of garlic. Remove the garlic and add the halved cherry tomatoes. Cook for five minutes then add the scampi and a pinch of salt, continue to cook for another 5 minutes, stirring frequently. Remove a part of the scampi, which can be used to decorate the dishes. Blend the rest with the hand blender together with the vegetable cream and a ladle of fish broth. Boil the pasta and drain it al dente, pour it into the pan with the sauce, mix and let it cook for a minute. Then serve with a pinch of chilli and decorate with the scampi you have left aside.
