Here is the cake for the summer, perfect for a joyful snack but also for a breakfast rich in taste! Peach pie is a truly delicious dessert, with a fragrant dough and a juicy filling full of fruit and sweetness. The cake is prepared only with unrefined flour and brown sugar, it has no butter but extra virgin olive oil for a simply delicious result!
Ingredients
Ingredients for the dough
300 grams of whole grain spelt flour
1 bag of baking powder
80 grams of whole cane sugar
1/2 teaspoon of vanilla powder
1 egg
1 small glass of red wine
50 ml of extra virgin olive oil
Almond or soy milk
Ingredients for the filling
1/2 lemon
800 grams of peaches with yellow flesh
1 tablespoon of red wine
2 tablespoons of whole cane sugar
Preparation of the dough
Let’s prepare the dough. In a bowl mix the flour, the sugar, vanilla and baking powder. In a separate plate, quickly beat the egg with oil and red wine and pour this mixture into the flour. Knead and add a little milk to make the dough soft. Form a ball and let it rest for about half an hour.
Preparation of the filling
In the meanwhile prepare the filling. Peel and cut the peaches into pieces, place them in a bowl and pour on them the juice of half a lemon, a tablespoon of red wine and 2 tablespoons of sugar, stir gently.
Preparation of the cake
Take again the dough and divide it into two parts, one the two-thirds of the other. Take a cake pan, covered with baking paper and a little oiled, cover the bottom of the pan with the big dough, raise the edges. Distribute the drained peaches. Finally, close with the small dough and lightly press the edges to seal the cake. Make small holes on the surface with a knife and bake at 180°C for 30 minutes.
