Eggnog is a Christmas drink typical of several countries, such as Great Britain, the United States, Canada and Australia. As the name suggests, eggnog is made with eggs that are beaten with milk, spices and often even a liqueur. Here we present a vegan and healthier version of eggnog, in this way we don’t lose its typical holiday aroma but we can keep an eye on health! In fact, this variant of eggnog is naturally sweet thanks to dates and raisins and is enriched with spices, with antioxidant power and useful to keep blood sugar under control.
Ingredients
500 ml of almond or cashew milk
30 grams of pitted dates
20 grams of raisins
1/2 teaspoon of vanilla powder
1/2 teaspoon of cinnamon
Pinch of nutmeg
Pinch of ground cardamom
Soak the chopped dates and raisins in water.
After about 30 minutes, drain the dates and raisins and squeeze them.
Pour the dates and raisins into the container of the immersion blender, add a couple of tablespoons of vegetable milk taken from the total and blend until you get a puree.
Add the rest of the milk and the spices, blend again. Serve either hot or cold, depending on your taste.
