Ingredients for 4 persons
300 g of husked red lentils
1/2 onion
1 clove of garlic
1 tablespoon of peppermint
1 tablespoon of parsley
Black pepper

Whole grain breadcrumbs

1 green apple

Soak the lentils in water for two hours, then cook them in a pot full of water on a low heat until they will be tender. Drain the lentils and put them in the mixer with half an onion cut into pieces, the clove of garlic, the peppermint, the parsley, some ground black pepper, a pinch of salt, half a teaspoon of chili pepper in powder and half a teaspoon of coriander. Pour also a little olive oil and blend all the ingredients until it becomes smooth. Make balls a little smaller than nuts and put in the breadcrumbs mixed with sesame. Bake in the oven at 180° for 15 minutes. Serve with salad and green apples cut into slices, dress with extra virgin olive oil and a tablespoon of vinegar.
