And then the watermelon provides lycopene, which is a powerful antioxidant, anticancer and cardioprotective carotenoid. Ingredients
1 small watermelon
70 grams of feta cheese
1 head of lettuce
Lamb's lettuce
1 small red onion
2 tablespoons of pumpkin seeds
2 tablespoons of almonds
2 tablespoons of pitted black olives
Mint
Extra virgin olive oil
Balsamic vinegar
Soy sauce
Clean the lettuce and lamb's lettuce. Use your hands to break the lettuce into strips. Cut the watermelon into quarters, then into slices. Remove the skin of the watermelon and cut the slices into chunks. Eliminate the watermelon seeds. Slice the onion and coarsely chop the almonds. In a bowl, pour the lettuce, lamb's lettuce, chopped feta cheese, almonds, pumpkin seeds, olives and onion. Season with extra virgin olive oil and a teaspoon of soy sauce, mix. Add the watermelon and complete with a drizzle of balsamic vinegar. Distribute the mint leaves and finally serve this beauty!
