Gnocchi with tomato and pine nut sauce

Here it is a tasty and satiating dish, gnocchi seasoned with a very special sauce, the grandmother Lina's sauce prepared with tomato and pine nuts! There are no eggs, cream or butter, only potatoes, unrefined flour and many tomatoes rich in lycopene, a powerful antioxidant. Pine nuts make this dish healthier and useful to strengthen the immune system and the bones and help the body to overcome periods of stress.

Ingredients

  • 900 grams of potatoes
  • 260 grams of semi-whole wheat flour
  • 400 grams of cherry tomatoes
  • 2 tablespoons of pine nuts
  • 1/4 of minced onion
  • Extra virgin olive oil
  • Basil
  • Sea salt

Preparation

Wash the potatoes well and put them in a pan full of lightly salted water. Cook the potatoes, when they are cooked, drain them and let them cool. Peel the potatoes and crush the pulp on the working table where you have already placed a part of the flour. Lightly salt the potatoes and add the rest of the flour. Compact and knead quickly the mixture of potatoes and flour until you are able to obtain a homogeneous and consistent dough. Divide the dough into several parts and give them the shape of cylinders, then cut them into small pieces and roll these pieces over the back of the tines on a fork, here you go the gnocchi. Place the gnocchi on a floured surface. Cook the gnocchi in boiling salted water, when they come to the surface, drain them with a slotted spoon. Season the gnocchi with a sauce that you have previously prepared in this way. Cut the pine nuts with a knife into coarse pieces. Pour the oil and the chopped onion into a saucepan, lightly sauté it. Add the pine nuts, after a minute add the tomatoes, rinsed and cut into pieces. Cook for about ten minutes until you can mash the tomatoes with a fork, mash them well and continue cooking for ten minutes. Complete with a pinch of salt and basil leaves. The sauce is ready.
