Every time grandma Lina came back from Imperia, her hometown, located in Liguria, an Italian region, she always brought to us the stroscia cake. Stroscia cake is a typical sweet of Liguria, very scented and really tasty, that, as the grandma always repeated, should not be cut but broken with hands. Indeed, stroscia comes from the dialectal term strosciare that means break. This cake is an amazing snack and healthy dessert, perfect for everybody since it isn’t prepared with butter or eggs but just with flour, extra virgin olive oil, sugar and a little wine. In this version we make stroscia even more healthy because we replace the white flour with unrefined flour. Enjoy this beauty!
Ingredients
400 grams of semi whole grain spelt flour
100 grams of whole grain spelt flour
200 grams of extra virgin olive oil
85 grams of whole cane sugar
120 grams of marsala or another sweet wine such as Port or Vermut
1 packet of backing powder
1 lemon
In a bowl mix the flours, the yeast and the sugar. Pour the wine, the extra virgin olive oil and the grated peel of half a lemon. Knead the ingredients until you’ll obtain a homogeneous dough. With the hands roll out the dough in a baking pan covered with baking paper. The height of the sweet should not be more than 1,5 cm. Spread on the surface a little whole cane sugar. Bake in the oven at 180°C for 28 minutes. Then, remove from the oven and let it cool down. Break it with the hands, taste its flavor and smell its fragrance!
