Healthy spaghetti with dry tomatoes, olives and radish leaves

It is possible to eat healthy, tasty and with what is in the kitchen! The proof is given by the recipe of today, a powerful source of vitamins, mineral salts, antioxidants and anti-inflammatory substances, thanks to the dry tomatoes, garlic, olives and radish leaves, a very special ingredient. In fact, as shown by scientific studies, radish leaves contain as much antioxidants as they are contained in green tea (Luo et al, Biomed Pharmacother, 2018)! The anti-inflammatory substances are then useful to fight the state of inflammation that, if it lasts for a long time and becomes chronic, may weaken the immune system.


320 grams of whole wheat spaghetti
1 clove of garlic
1 bunch of radish leaves
10 dry tomatoes
1 tablespoon of green or black pitted olives
1 tablespoon of shelled walnuts
Extra virgin olive oil
Sea salt
Blend together the garlic clove and the well-rinsed radish leaves. Crush the nuts coarsely and cut the olives into pieces. If you have dry tomatoes in oil, drain them, otherwise rinse them under water to remove the salt, then cut them into slices. Mix all these ingredients in a bowl and add a drizzle of extra virgin olive oil. Boil the pasta and drain it al dente, season with the sauce and enjoy this special healthy meal!
