Homemade rustic pizza

Here is the recipe to prepare a yummy and healthy pizza, with the help of all the family! This is a pizza as it was once, typical of the rural tradition, whole grain and rich in vegetables. We added also the shiitake mushrooms and the stracchino cheese, a creamy cow’s milk cheese that you can replace with mozzarella if you don’t find this type of cheese. Cheeses like mozzarella or stracchino and shiitake mushrooms are precious sources of vitamin D, a vitamin able to support the immune system and to boost the defenses of the respiratory tract. And of course we added also capers, that bring quercetin, an antioxidant characterized by an antiviral effect. Well, joy and health are served!

Ingredients

Ingredients for the dough

250 grams of semi whole wheat flour

150 grams of whole wheat flour

50 grams of wheat flour

250 grams of lukewarm water

12 grams of fresh brewer’s yeast

5 grams of fine ground sea salt

Ingredients for the dressing

250 grams of crushed tomatoes

1 handful of dry shiitake mushrooms

1/2 escarole

50 grams of cheese, like stracchino or mozzarella

200 grams of cherry tomatoes

2 tablespoons of pitted olives

2 tablespoons of capers

1 clove of garlic

Extra virgin olive oil

Preparation of the pizza

Melt the yeast in the water. In a large bowl mix the flours, pour the water with the yeast and two tablespoons of oil. Knead the dough, if needed add other water to obtain a soft dough. Go on kneading the dough, incorporate the salt. Throw the dough twice against the working table to activate the yeast. Place the dough in a bowl and let it raise for 3-4 hours. Roll out the dough with your fingers on two circular baking pans greased with oil. Distribute the crushed tomatoes and a pinch of salt. Bake in the oven at 200° for 20 minutes in fan oven.

Preparation of the seasoning

Soak the mushrooms in water for 30 minutes, then drain them. Cut the mushrooms into slices and cook them for 2-3 minutes in a frying pan with a little olive oil and the chopped clove of garlic. Put the cooked mushrooms in a bowl, add the well washed escarole cut into pieces, the washed tomatoes cut into slices, the olives cut into pieces, the capers and the cheese cut into pieces. Let the ingredients rest for 15 minutes.

Pizza is ready!

Take the pizzas from the oven and place the seasoning. Fold in half the pizzas and a special lunch is ready!
