What an amazing summer with the ice tea and berry syrup. This joyful drink is also healthy because it is refreshing and it doesn’t contain too much sweeteners. The scented and sweet note is only given indeed by the homemade syrup of raspberries, strawberries, blackberries and red currants, prepared with a little brown sugar. The base ingredient of ice tea is rooibos tea that, according to scientific studies, is antioxidant and able to boost the immune system, moreover, it protects bones, skin and teeth. To complete this ice tea also fresh berries and peppermint leaves that bring vitamins, mineral salts and antioxidants in addition to being digestive.
Ingredients
900 grams of a mix of berries (raspberries, strawberries, blueberries, red currants, blackberries)
30 grams of ginger
300 grams of brown sugar
200 ml of pomegranate juice without added sugars
1 lemon
4 teaspoons of rooibos tea
500 ml of water
Some leaves of peppermint
Rinse the berries and put them in a large pot. Grate the ginger, add the lemon juice, the sugar and the pomegranate juice. Bring to the boil and let it simmer for 10 minutes without a cover. Let the syrup cool down and filter, pour in a bottle and keep in the fridge. Prepare now the tea. Bring to the boil 500 ml of water. Remove from the heat and add the rooibos tea. Let it rest for 5 minutes, then filter and let it cool down. Add the berry syrup as much as you like, a glass or less. Stir and keep in the fridge. Serve with ice cubes and decorate with berries such as pieces of strawberries of red currants and some leaves of mint.
