Here is the Italian recipe for the delicious crostoli filled with jam, the Carnival sweets that everyone, adults and children, will like. The recipe we propose is traditional and is that of grandmother Lina. These are the jam-filled crostoli that she always prepared for us at Carnival, simple, fragrant and with a cherry heart.

As children, the Carnival celebration had a special flavour. Sure, there were confetti and trumpets, Italian frappe and cream donuts, but above all there was the afternoon appointment with the grandparents. Grandma Lina always welcomed us with her smile and open arms and then she showed us her efforts for that day, a bowl full of jam-filled crostoli, or Italian Carnival sweets, that dominated the center of the table. Those crostoli were made according to grandmother Lina's traditional recipe, just simple and natural aromas, lots of jam and a unique fragrance. Today we thought we would share this recipe with you, also maintaining the frying method of cooking, this is because, every now and then, good fried food stimulates the functionality of the liver. The important thing is to use an oil with a high smoke point, such as extra virgin olive oil or peanut oil, while avoiding other seed oils (Aufiero, Nutritional and therapeutic role of foods). And so, here you are, a recipe that tastes of childhood, laughter and love.

Ingredients

2 eggs

50 grams of whole cane sugar

500 grams of wholemeal flour

50 grams of butter

1 organic lemon

100 ml of white wine

300 grams of cherry jam

Oil for frying

In a bowl mix the flour with the sugar. Add the eggs, the butter in pieces, 100 ml of wine and the grated lemon zest. Knead by mixing the ingredients. Work the dough until you obtain a homogeneous dough, cover and let it rest for about an hour. Roll out the dough using a rolling pin until you obtain a thin sheet. Using a knife or a pastry wheel, cut out rectangles with the long side measuring approximately 10 cm but the size can change according to your tastes. Spread the jam on each rectangle. Fold the rectangles in half and seal the edges. Fry in abundant hot oil until the crostoli are golden. Dry the excess grease with absorbent paper. Serve immediately!
