A tasty and healthful first course, in which the lemon flavor mixes well with the stronger taste of pepper and the sweetness of zucchini and onion. Khorasan pasta is the perfect completion, in fact khorasan wheat is an ancient grain ancestor of durum wheat and has healthful properties demonstrated by scientific studies that have highlighted the antioxidant power of this grain (Frontiers in Bioscience, 2011 by a team from the University of Bologna).
Ingredients
320 g of khorasan pasta
2 zucchini
1 onion
1 organic lemon
shaved pecorino cheese
Salt
pepper
Extra virgin olive oil
Cut the zucchini into thin rounds and the onion in slices. Sauté the onion in a frying pan with a little oil, then add the zucchini and cook for ten minutes. In the meantime, cook the pasta in salt water in accordance with the timing reported on the pack. Drain pasta “al dente” and pour in the frying pan with the onion and the zucchini, stir and cook briefly. Remove from heat and add the grated lemon peel and a handful of pecorino cheese, stir with a spoon and serve with ground black pepper.
