Ingredients
200 grams of semi-wholegrain spelt flour
200 grams of hazelnuts
70 grams of brown sugar
1/2 teaspoon of vanilla powder
1/2 teaspoon of yeast powder
60 ml of extra virgin olive oil
4 tablespoons of soy milk
Hazelnut spread or 100 grams of dark chocolate for the filling
Grind the hazelnuts until you’ll get a flour. In a bowl mix the spelt flour, the hazelnut flour, the sugar, the yeast powder and the vanilla. Add extra virgin olive oil and soy milk and stir in order to mix the ingredients. The result will be a grainy dough similar to wet sand. Create balls with your hands with a diameter of about 3 cm. Place the balls on a baking pan covered with baking paper and press gently in order to slightly flatten the part of the cookie in contact with the pan. Bake in the oven, traditional mode, at 160° for 18 minutes. Remove from the oven and let it cool down. Spread on a half-sphere a little hazelnut cream, or the dark chocolate melt in a double boiler, add another half-sphere by matching the cookies. Go on in this way until you finish all the ingredients. Place the cookies on a plate and serve!
