Grandma Lina, who was really an amazing chef, often prepared this recipe with cuttlefish seasoned with garlic, parsley and lemon, really delicious. Here we propose the recipe with spinach, a very healthy choice. The result is a powerful anti-inflammatory food, rich in proteins, thanks to the cuttlefish, fibers, vitamins and mineral salts thanks to the aromatic herbs and the spinach. Ingredients for the cuttlefish
600 g of cleaned cuttlefish
2 cloves of garlic
2 lemons
1 handful of parsley
1 leaf of sage
Sea salt

1 kg fresh spinach
Extra virgin olive oil
Sea salt
Rinse the cuttlefish and cut into strips. In a large frying pan pour half a glass of extra virgin olive oil and the chopped garlic. Add also the cuttlefish. Let it cook for 3-4 minutes and then add the lemon juice. Add also salt and pepper and the sage. Let it cook slowly on low heat for 45 minutes. If the cuttlefish should become too dry add lemon and water. Finally add also chopped fresh parsley. In the meantime, prepare the spinach. Rinse the vegetables accurately, then steam them with a little coarse sea salt. Drain the spinach, squeeze it and then sauté it in the frying pan with a little extra virgin olive oil. Serve the lemon cuttlefish with spinach.
