We love this pasta, with the spicy scent of curry and the sweet taste of onion and mushrooms for a very yummy and healthful dish. The fibers of mushrooms are satiating and helpful to keep under control cholesterol and blood sugar levels. Curry spice has powerful antioxidant, anti-inflammatory and anti-cancer substances.
Ingredients
320 g of whole grain spelt linguine pasta
300 g of pleurotus or champignon mushrooms
1 onion
Curry
thyme
Extra virgin olive oil
Sea salt
Clean the mushrooms with a wet cloth and cut them into thin slices. Cut into slices also the onion and sautè it in a frying pan with a little extra virgin olive oil and two tablespoons of water. Then, add the mushrooms and season with salt. Keep on cooking for ten minutes. In the meantime cook the linguine pasta in a pot full of salt water, drain the pasta al dente and put it in the frying pan with the sauce and stir with a spoon. Complete with a sprinkle of curry and a pinch of thyme, stir and serve this yummy pasta!
