Linguine pasta with orange is a joyful and scented recipe, but it is also a present that you can make to yourself and to the persons you love because you’ll prepare a really healthy dish, rich in precious omega 3 fatty acids and in the powerful antioxidant and anti inflammatory substances contained in the peel of the orange! Whole grain pasta helps keep at bay the blood sugar levels, a little aid if you decide to prepare this recipe for a special Christmas lunch.
Ingredients
320 g of whole wheat or whole grain spelt linguine pasta
10 scallops
5 prawns
1 bunch of rocket salad
1 shallot
1 organic orange, peel and juice
100 ml vegetable broth
1 little glass of dry white wine
Extra virgin olive oil
Sea salt
Black pepper
Peel the prawns and cook them in water for a minute, then drain and cut them into pieces, keep apart. Chop up the shallot and sauté it in a frying pan with a tablespoon of extra virgin olive oil and two tablespoons of water. Cut the scallops into pieces and add to the pan for a couple of minutes. Pour the wine and let it evaporate. Remove the scallops and take apart. Grate a piece of orange peel, you should obtain about half a teaspoon of grated peel. In the same frying pan where you cooked the scallops pour the broth, the orange juice and the grated orange peel. Stir with a spoon and bring to boil, after a minute add also the rocket salad cut into strips, the prawns and the scallops, add salt and pepper. Cook the linguine pasta in salt water, then drain the pasta and put it in the frying pan with the sauce, stir and cook for a minute. Place the pasta with the orange and fish sauce in a large plate and decorate with orange peel cut into thin slices. Enjoy this beauty!
