Indeed, it merges the antiviral and antimicrobial properties of garlic and onion, the antioxidants of herbs and a lot of vitamins and mineral salts. Ingredients
320 grams of whole grain maccheroni pasta
1 red pepper
1 eggplant
1 zucchini
1 carrot
1 onion
1 clove of garlic
1 tablespoon of pitted black olives
Thyme
Parsley
Rosemary
Extra virgin olive oil
Sea salt
Chili pepper
Rinse and cut into slices an eggplant. Grill the slices. Blend in a blender the grilled eggplant, the garlic, the olives, a handful of parsley and the needles of a sprig of rosemary. Slice the onion and sauté it in a frying pan with a tablespoon of extra virgin olive oil and two of water. Add the pepper cut into strips, the carrot and the zucchini cut in julienne. Cook for 5 minutes, stir often. Cook the pasta and drain it al dente. Season the maccheroni with a little olive oil, the eggplant sauce, the cooked vegetables, that should be a bit crunchy, a pinch of thyme and the chili pepper cut into slices.
