Minestrone with vegetables, beans and pesto
Minestrone is a soup of Italian origin prepared with vegetables, rich in vitamins and mineral salts important for the health of the body. The beans give a high intake of proteins and the pesto, made with basil and garlic, makes this dish a special recipe with the taste that recalls the soups of the grandma.
Ingredients for 4 persons
- 200 gr of short pasta or rice, wholegrain
- 100 gr of dried beans
- 1 onion
- 1 shallot
- 1 carrot
- 1 celery
- 1 leek
- 2 potatoes
- 1 small white turnip
- 1 zucchini
- 1 ripe tomato
- 3 leaves of savoy cabbage
- Some leaves of basil
- ½ clove of garlic
- Extra virgin olive oil
- Salt
- pepper
Preparation
Soak the beans for a whole night. Cut into slices the onion, the shallot and half a leek, cut into pieces the carrot, the celery, the zucchini, the peeled potatoes, peeled turnip, the tomato and the savoy cabbage. Pour in a pot two liters of water, oil, the beans and all the vegetables and cook for at least one hour. Crush the biggest pieces of vegetables with a spoon, add salt. Add now pasta or rice and cook in accordance with the timing reported on the pack. place the basil leaves and garlic into the bowl of a food processor and pulse a several times, add the pesto to the soup and mix well.
