In Sweden they are called Kardemummabullar, we call them delicious cardamom buns! And in this even tastier version we offer them stuffed with apple and coconut, absolutely to try! The brioches are prepared without butter and sugar, but with honey and unrefined spelt flours. Cardamom gives a spicy note and helps to keep body weight under control, it is antiviral, antioxidant and anti-inflammatory. In short, these morning buns are a wonderful way to start the day!
Ingredients for the dough
250 grams of semi wholegrain spelt flour
150 grams of whole grain spelt flour
250 ml of soy milk
5 tablespoons of honey
50 grams of extra virgin olive oil
2 tablespoons of soy yogurt
1/2 teaspoon of ground cardamom
7 grams of fresh brewer’s yeast
Ingredients for the filling
200 grams of apple mousse (purchased ready-made or prepared by cooking 2 apples cut into pieces with half a glass of water until the apples are soft, blend it with the immersion blender)
1 grated apple
2 tablespoons of coconut flakes
1/2 teaspoon of ground cardamom
Preparation of the dough
Quickly heat the milk, it should be lukewarm. Pour the milk into a large bowl, add the honey, cardamom and yeast. Stir until the yeast has dissolved. Pour in the oil and mix.
Gradually add the flour, knead the dough. Leave to rise for 1 hour in a warm place. After this time, take the dough and roll it so that you have a square of about 50 cm on each side and 5 mm thick.
Preparation of the buns
Spread the apple mousse layer, distribute the coconut, grated apple and cardamom. Fold the side of the dough, which is closest to you, towards the center. Take the opposite side and fold it over the one you just folded, this way the filling should no longer be visible and you should have got a rectangle with the long side towards you. With a pastry wheel or a sharp knife cut the dessert into many vertical strips about 2 cm wide. Take a strip, gently twist it three times. Wrap it around itself with a snail shape, block the end by passing it under the bun. Arrange the buns on a baking sheet covered with baking paper. Let them rise for 30 minutes. If you wish, you can brush the surface of the buns with egg, then bake at 180 degrees for 15 minutes.
