Onion soup is the perfect recipe for winter and the coldest days, it is able to heat from the inside by stimulating the thermogenesis and with also a little help to keep at bay the body weight! This soup is also very tasty and brings carbohydrates, fibers and mineral salts. The version that we propose includes also the addition of cheeses, source of calcium, taste and creaminess, vegan people may substitute the cheese with vegan cheeses and can spread on the soup a handful of flakes of nutritional yeast.
Ingredients for 4 persons
4 white onions
1 liter of vegetable broth
Whole grain spelt flour
Half a glass of dry white wine (optional)
Slices of wholegrain bread
Swiss cheese such as gruyiere
Parmesan cheese
Extra virgin olive oil
Sea salt
Black pepper
Cut into thin slices the onions and sauté them for 10 minutes in a frying pan with a tablespoon of extra virgin olive oil and two tablespoons of water. Add a tablespoon of flour and stir with a spoon, go on cooking for other 5 minutes. Pour the broth and half a glass of wine and let it cook for 20 minutes. Add the sea salt and abundant black pepper, freshly ground. Toast the slices of bread and place them on the bottom of oven safe serving bowls. Add the cheese cut into pieces and finally pour the onion soup. Spread some shelved parmesan cheese. Put the bowls in the oven at 180° for 10 minutes. Remove then from the oven and serve hot. As a final touch add ground black pepper, as much as you like.
