A lot of vegetables rich in mineral salts and precious antioxidants for this yummy pasta recipe, healthful and really satiating. The particular sweet taste of Swiss chards contrasts the more intense one of anchovies and garlic, the broccoli brings fibers and powerful anti cancer substances while the durum wheat pasta avoids the dangerous blood sugar spikes at the end of the meal. A dish that everybody will love!
Ingredients for 4 persons
320 g of durum wheat paccheri pasta (or another type of durum wheat short pasta)
2 bunches Swiss chards
1 small broccoli
1 clove of garlic
5 fillets of anchovies in oil
Chili powder
Extra virgin olive oil
Sea salt
Whole grain breadcrumbs
Boil for 3-4 minutes in slightly salt water the Swiss chards cut into coarse pieces, then drain the vegetables. Let them cool down a bit then squeeze. Heat a frying pan with a little extra virgin olive oil, two tablespoons of water and the crushed garlic. Remove the frying pan from the heat and add the fillets of anchovies, let them dissolve by stirring every now and then. Put again the frying pan on the heat and add the Swiss chards, season with sea salt fine ground and chili powder and keep on cooking for five minutes. In the meantime cook the pasta, when there are 5 minutes left at the end of cooking add the broccoli cut into pieces, finally drain pasta and broccoli and add all these ingredients to the frying pan with the sauce and cook for a minute. Put the pasta dressed with the sauce in the plates and in the same frying pan of the sauce add three tablespoons of breadcrumbs, toast quickly. Add the breadcrumbs to the pasta and enjoy your meal!
