We are in spring and gardens and terraces are full of scented aromatic herbs. Here for you a very tasty and healthful recipe that uses all ingredients that we can find in our kitchen. Rosemary, basil, peppermint and lesser calamint, but also parsley and sage are together to dress this pasta.
Ingredients for 4 persons
320 g of durum wheat, buckwheat or Khorasan spaghetti
1 tablespoon of rosemary
40 leaves of basil
5 leaves of sage
5 leaves of peppermint
5 leaves of lesser calamint
1 tablespoon of parsley
2 tablespoons of pine nuts and almonds together
1 clove of garlic
2 cherry tomatoes
Extra virgin olive oil
1 pinch of coarse sea salt
Cook pasta in a bowl full of salty water in accordance with the timing reported on the pack. In the meantime, prepare the aromatic herb pesto. Put in the blender the pinch of coarse sea salt, all the aromatic herbs, the tomatoes, the dry fruits and the garlic and blend until smooth. Pour the sauce in a bowl and add slowly the olive oil by stirring constantly, add oil until the pesto has the desired consistency. Then, in another large bowl pour two tablespoons of this pesto, the pasta drained “al dente” and two tablespoons of water in which you cooked the spaghetti, add the rest of pesto and mix well. Serve and enjoy your meal!
