Pasta with cauliflower, raisins and pine nuts is really a delicious recipe. The flavors blend together and the sweetness of raisins goes perfectly with the softness of cauliflower and the crunchiness of pine nuts. But it isn’t just taste. This pasta is also a rich source of mineral salts, vitamins and powerful antioxidants thanks to its special ingredients, tomato, chili pepper and cauliflower. Enjoy this amazing meal!
320 g of whole grain durum wheat, spaghetti or linguine as you like
3 tablespoons of raisins
2 tablespoons of pine nuts
4 anchovy fillets in oil
200 g of crushed tomatoes
Extra virgin olive oil
Divide the cauliflower into florets and keep apart. Soak raisins in a bowl full of water. Cut into thin slices the onion and sauté it in a frying pan with a tablespoon of extra virgin olive oil and two tablespoons of water. Add the anchovy fillets and let melt on a low heat. Add the squeezed raisins and the tomatoes, stir with a spoon and let it cook for 5 minutes. Cook the pasta in salt water in accordance with the timing reported on the pack, when there are five minutes left at the end of cooking add the cauliflower, finally drain pasta and cauliflower and add to the frying pan, add also the pine nuts. Mix and cook for a couple of minutes in order to blend the flavors. Complete with some fresh chopped chili pepper and serve!
