Here's a breakfast that tastes like summer, simple and absolutely delicious, peach pancakes! The peach slices added to the mixture give it softness and a juicy and fragrant note, while the vanilla and cinnamon soften the acidity of the fruit. Not only that, spices also help control sweet tooths, keep blood sugar under control and, in the case of cinnamon, even refresh the body, just perfect for hot summer days. And then the pancakes are made only with wholemeal flour, an egg, a little brown sugar and yoghurt, which you can choose in the vegan version. So no butter or cream for these delicious little treats, which are prepared with an eye to health and body weight.
250 grams of thick yogurt, also vegan
2 tablespoons of whole cane sugar
1 teaspoon cinnamon
1/2 teaspoon vanilla powder
100 grams of wholemeal flour
1 teaspoon baking powder for desserts
In a bowl beat the egg with a fork, combine the yogurt and sugar. Separately mix the flour, baking powder, vanilla and cinnamon. Pour into the egg and yogurt mixture and mix the ingredients. Cut the peaches into slices. Heat a non-stick or cast iron pan over moderate heat and pour a ladleful of the mixture, place a couple of peach slices on the surface. Repeat the same process adding more ladles of the mixture in order to prepare more pancakes at the same time, just be careful to leave some space between the pancakes. When you see bubbles forming on the surface of the pancake, it will take about 3-4 minutes, flip the pancake over and continue cooking on the other side for another 3-4 minutes. Serve peach pancakes with fresh peach slices and other seasonal fruit, like raspberries!
