320 grams of wholemeal spelt pasta in a short format, such as penne
2 artichokes
300 grams of king oyster mushrooms
1 clove of garlic
Extra virgin olive oil
Pink Himalayan salt

Clean the mushrooms with a damp cloth and cut them into slices. Remember that everything is used in king oyster mushrooms, even the stem. Then clean the artichokes, remove the tougher outer leaves, remove the inner beard and cut the artichokes into thin slices. Chop the garlic and brown it in a pan in extra virgin olive oil. Add the artichokes and sauté them for 5 minutes. Add the mushrooms, season with salt and finish cooking for ten minutes, adding a ladle of water if necessary or, to give more flavour, vegetable broth. Cook the pasta in plenty of salted water. Drain the pasta al dente and sauté it in the pan, adding a ladle of cooking water or vegetable broth. Stir and serve with a generous grind of pepper.
