Easy on the eyes and a healthful dish, all this is the recipe of today, whole grain spelt penne pasta with garlic, olive oil, chili pepper and cauliflower. Antioxidants, fibers, vitamins, first of all vitamin C very important for the immune system, and mineral salts for this dish that is also very quick to prepare.
Ingredients for 4 persons
320 gr of whole grain spelt penne pasta
1 cauliflower medium size, it can be purple or white
2 cloves of garlic
Extra virgin olive oil
1 chili pepper
Rinse the cauliflower and divide it into small florets. Go on with the dressing of the pasta. In a frying pan sauté, in abundant olive oil, two cloves of garlic cut into slices. Cook on low heat, the garlic should not fry but it should be cooked slowly and at low temperature, if it fries remove momentarily the pan from the heat. Just before the end add a small part of the chili pepper cut into slices. In the meantime, cook the pasta and, when there are 7 minutes left in accordance with the timing reported on the pack, add the cauliflower, keep on with the cooking. Drain then the pasta with the cauliflower when the penne will be “al dente” and put all these ingredients into the pan with the aromatic oil. Cook for 1 minutes and serve. If you like the spicy taste you can add the remaining chili pepper cut into slices.
